I was delighted that this Christmas we had the chance to cook Hallacas, a typical Venezuelan dish only prepared during Christmas. It consists of a corn pasty filled with a pork stew (cooked with raisins, olives, vegetables and spices) and finally wrapped and boiled in banana leaves.
It is extremely laborious and a small team is necessary to be able to make them in less than 24 hours. It is a great family and friends event, usually there is music, drinks and a fantastic festive spirit, all going on in the kitchen.
This year team consisted of 9 people all executing tasks from banana leaf washing, stew and dough making, string tying, Hallaca boiling and of course eating!
A great pleasure to have Hallacas for Christmas in London.
